Designed for industrial use in the manufacture of toast bakery products.

Description

It is a dry powder mixture of pre-ground and homogenized powders of food acids, enzyme preparation, calcium peroxide, glucose, rice flour and wheat flour.

Recommended dose

to the mass of flour is 0,5-2 %.

Provides improved rheological properties of dough; thin-walled porosity of the crumb; reduced lumpiness; well-developed durable structure of gluten, an increase in the durability of the dough piece during fermentation; increase in water holding capacity of the test.
